A quick and delicious purée to impress your guests. We like to serve in savoury tartlets or perhaps piped onto blinis…a dash of crème fraiche always helps.

Ingredients

2 Bunches Kingfisher watercress, coarse stems discarded

550g English peas

2 Tbsp Unsalted butter

60ml Water

A pinch of salt & pepper

Method

  1. In a large saucepan, combine the peas, watercress & water. Cover, and boil for 5 minutes.

  2. Transfer the mixture into a food processor, add the batter and purée until smooth.

  3. Add salt and pepper to taste. enjoy!
